Ingredients

    3 cups or 2 head of broccoli florets
    1/2 cup-sliced red onion
    3 slices bacon-sliced thin and cooked crisp
    1/2 cup raisins
    1/2 cup cashews-rough chopped into large pieces
    Miso Dressing-The dressing I originally used was Galeos Cafe Miso Dressing, available at Galeoscafe.com. The website showed Whole Foods as a source but they did not carry at the Sacramento Whole Foods. It's a sweet, refrigerated, low calorie dressing. Whole foods did have a refrigerated Miso dressing that was okay, but needed more sweetener. Any sweet Asian inspired dressing will work.

    Broccoli Cashew Salad

Directions


Blanch broccoli in boiling, salted water for 1-2 minutes, then place in ice bath. Cook bacon and drain on paper towel. You can either use a knife to chop cashews or just place in a plastic bag, then pound nuts with your fist, until they are broken into large pieces. Place all ingredients in a bowl and toss with dressing. Serves 8. Enjoy the new year!
